Not-So-Secret Secret: I hate green smoothies.
Spinach does not go in a blender. Ice cream goes in a blender. I know, I know, weight loss, clearer skin, cures cancer, BLAH DEE BLAH-- just stop. You're grossing me out.
Or at least that's what I used to say. Until this recipe.
Honest Fare's Green Smoothie.
This recipe isn't "good for a green smoothie". It isn't "ok except for the spinach". It is delightful, addictive, ohmygod delicious. It tastes like heaven. Sometimes I make one for tomorrow and accidentally eat it tonight.
What makes this recipe different from others I've tried: parsley and ginger. For the love of god, do not leave these out. They somehow cut the taste of spinach and leave a really bright, slightly spicy flavor in its place. Do not leave them out. I will know if you did.
Also required: sweetened soy milk. Sweetened soy milk is usually too sweet for my taste, but it really elevates this smoothie. Use about a cup of it. Maybe more than a cup. Go crazy. It's like 100 calories.
And finally, I think the apple and peaches really add something. The peaches add a creaminess and the apple adds a clean sweetness. If you can't find frozen peaches, slice up a fresh peach and freeze it yourself. No fanciness required.

2 big handfuls of fresh, raw spinach
½ pink lady apple, chopped
1 tbsp fresh parsley
1 coin fresh ginger root, minced
1 c vanilla soy milk
4 strawberries, frozen
½ banana, frozen
½ peach, frozen
¼ c plain low-fat yogurt (optional)
Blend all ingredients. Serve chilled.

Tips
- Parsley and ginger can be frozen! Just mince the ginger and pack it in an ice cube tray with the parsley, a single serving for each cube. Add a little water over the top and freeze. Once frozen, pop out the cubes and store them in a freezer bag. Every time you make a smoothie, just add one cube of ginger and parsley to the mix!
- Make your green smoothie at night and bring it to work the next morning in a quart mason jar or a BPA-free Nalgene bottle.
- I was going to link you to a page explaining the health benefits of green smoothies, but they all sound kind of new-age-cuckoo. But here's the thing: all the energy and vitamins and nutrition our bodies have comes from the foods we eat. You don't need the internet to tell you that fruits and veggies are king.
